Every Wednesday night is Vietnamese vegan pop up night, and also Wednesday was my first visit. It's amazing food, great service and ambiance, too. I ate the coconut curry soup, crepe with avocado and nuoc cham and then the hibiscus sorbet. I definitely want to go back next Wednesday! Eat here!!

This ramen is different, the best way to describe it is it's Asheville's twist on ramen. The pulled or shredded pork and red cabbage(?) and tons of scallion was put together nicely. Not your traditional ramen by any means but a very solid meal.

As of June 1st, lunch service has been discontinued at Charlotte Street but will still available at Gan Shan Station West. I have yet to get there but am eager to check it out.
Dumplings, like most other dishes here, come in vegan versions and are not just afterthoughts. Veggies are used smartly at Gan Shan.
Gai Lon is excellent! Very nicely spicy and full of flavor. Kimchi is a nice addition to this menu. It is fresh and made with great care and with a true love for the dish. Szechuan Cucumbers are really nice side dish.
I am looking forward to going for dinner, but that just might not happen. Why, you ask? Service over lunches I've had so far has been great. Dave was professional, knowledgeable and attentive.
Dani has become my favorite server. So glad she came to Gan Shan in order to work daytime. Dani is an excellent server and just a delightful woman. Food is always great here, but Dani turns plates of fantastic food into a memorable lunch. Professional, geuinely kind, fun and sweet - you'll find her to be a fantastic server. She's really great. Come find out for yourself!
I would recommend lunch at Gan Shan any day. Any day Dani serves you lunch will be really special.

Amazing service that was very good at answering our questions. The food was certainly distinctive and different from anything we’ve ever had and was very tasty! The restaurant itself was very comfy and inviting!

Superb dining experience in this fun, low-key atmosphere. Plenty of spice for the adventurous but plenty of flavor to balance it out. Plus, the drink options were off the charts!

This is my go-to restaurant for lunch with my girlfriends. I rarely venture from the fried rice with their salt and pepper tofu because it's SO good, but the specials often tempt me as do the dumplings. I've never been disappointed by the food or service.

Ate at the bar and was the first person in there on a Thursday. David made some great recommendations and steered me to the gan lon and the ramen. Both were great and had good complex flavors. The ramen broth had enough umami unlike some watery broths I've had at lesser places.

I emailed a person at Gan Shan to set up the Chef's Tasting Table for my SIL's 30th bday, and even though they were not able to set it up, they offered to provide a "special" dessert (which was delicious btw). There was a group of 8 of us and we were quickly seated outdoors, and the menu was unique. We ordered a variety of plates and shared (even though I didn't want to share mine...the seasonal watermelon app). Prices were a little high, but a dish can easily be split between two people). I can't wait to visit again!

When is Asheville, this is the place to visit!! The rice bowl was the win...Fried rice is full of smoked flavor and delicious bean fried chicken... Like wow... bean friend chicken was such a good touch to the fried rice.
Chicken wings were extra flavorful with asian touch!!
Dumplings of the day were taste of pork and were good, but i think next time id like to try something different.
The Chicken Ramen Noodle bowl is the one meal i would not recommend!! It looked tasteful but to my taste i just would not recommend.
I loved the atmosphere of the restaurant, and the waitress was super friendly.

My second visit here. Loved the food. The shrimp had a happy flavor explosion in mouth. Think that there were supposed to be shrimp in my salad, which the waitress claimed that were "minuscule in the dressing".
Was tried to upsell twice, which makes it awkward for me.
