Backdraft Pizzeria

BackDraft Pizzeria would have gotten 5 stars for the flavors of the pizza and pizza rolls but the timing was so slow, it left me wondering if I was just starving when the pizza was finally ready. They were so busy that they ran out of cheese and took about 40 minutes to prep the ingredients. I did enjoy the dough and the selections of pizza.

Update! Had the backdraft pizza, the sausage was great and the jalapeños are my classic combo with pepperoni. Coming from Connecticut the home of some of the supposed best pizza in the country from New Haven I was impressed. I wasn’t sure what to expect from pizza in Texas. You order online and within 20-30 minutes your order is ready for pick up! The size of the pizza for the price was very fair. Pepperoni is my go to and it was great. Thin and crispy and holds up when you pick up a slice you don’t have to fold it in half like New York style pizza. They offered complimentary packets of Parmesan cheese and red pepper flakes my personal go to add ons for pizza. The guys on the truck were friendly. Will be back! They have bread sticks, salads and much more then just pizza! Great spot behind Celis brewery.

They cut corners and skip ingredients :( I’ve been here twice. The first time the pizza was very good but it took 40 minutes to cook. I ordered the twisted Rita pizza and it looked similar to the picture on their website—mozzarella chunks and all The second time I ordered the same thing (twisted Rita pizza) and the pizza looked totally different, it was a regular cheese pizza with basil and tomatoes. They completely omitted the mozzarella—which is a staple of the margarita pizza. Pictures shown below.

Shrooms is the best pizza eva! And being at Celis Brewery, that’s just cherry on top! Highly recommended combo… Update: they changed the cheese that they use and it’s not the same anymore. Actually now it’s very ordinary. Very saucy and too much salt. Unless they can revert, I would avoid this pizza:( Yet another update: I guess they took the feedback seriously and back to using the cheese and the pizza is awesome again!

When we walked up, we were told that it was an hour and a half wait with no one else around. Turns out that all ordering is done online (including dine-in) and their portal seems to have a $3 processing fee? The food at least smelled nice outside the truck. I get that this helps keep them in business but I feel it kind of takes away from the food truck experience.
