The staff was helpful and the food was excellent. I got the #2 (lobster red curry broth) and my friend got the #1 (tonkotsu broth). Both were very different with a happy harmony of flavors. I loved the spicy eggplant, pickled cucumber, and peanuts in mine - I would probably opt for a different protein (not shrimp as it was cold and then overcooked a bit in the soup). I love that this modest menu has so much variety and the dishes have such a great understanding of what works. I am excited to go back and build my own. Don't want broth? Go for the sauce. Just another beauty of the menu.

Favorite ramen in Asheville, love the build your own bowl and the toppings they have available. The lobster red curry broth is seriously delicious. Do yourself a favor and give it a try!

Broth Lab is a gem in Asheville's River Arts District. Their unique fast-casual menu fosters a deliciously simple experience – GOOD ramen that isn't overly complicated. They've removed all of the unnecessary bells and whistles to produce good old fashioned ramen that warms your belly and your soul. You can make your own bowl or choose one of their signature bowls. Give it a try if you haven't already!

Don’t miss this place! I have eaten at the Broth Lab about 10 times now and every experience has been the BEST (it’s on our weekly rotation). It is consistently so fresh, incredibly flavorful, and the environment is immaculate & stylish. I feel inspired to write a review after trying a new, comparable ramen restaurant in downtown Asheville, which was greasy and overpriced. The Broth Lab blew it away! The quality of ingredients, flavor profile, and overall experience is top notch and we are so lucky to have it in town! Best ramen in Asheville, hands down.

My first time here I had a head cold and it was cold outside. My ramen hit the spot! It was so flavorful, delicious, and filling. I ordered the tonkotsu broth w braised pork belly, ride noodles, mushrooms, kale and pickled onions. It was very good portion as well. I had some left over to take home. My meal was 12$. The staff were very friendly. They also have a decent selection of sake, beer, and wine if you would prefer as well.

Affordable and delicious noodle bowls with their favorites or options to creat your own concoction with a few choice beer options. Feels and is a hole in the wall without a sign. Hidden river arts district gem. Will definitely be back to try different combinations!

The broth was very tasty and the menu is simple while still offering enough options for ingrediants to make your own unique ramen. I found the prices to be very reasonable and the staff were polite and friendly.

This is the best ramen bowl ever. I had the wavy noodles with fried tofu, fried pickled cauliflower, corn and kale. It was warm on a cold night. Very tasty. We loved it. Best fried tofu.
